Cranberry glazed chicken
Ingredients/Components
- margarine - 2 Tbsp
- hot water - 3/4 c
- orange juice - 1/4 c
- salt and pepper - 1 item
- cornbread stuffing mix - 2 c
- split chicken breasts
- can whole cranberry sauce or jellied - 1 oz
How to make cranberry glazed chicken:
Heat oven to 400°. Mix cranberry sauce, 1/4 cup orange juice and 2 tablespoons margarine in saucepan. Heat until smooth. Place chicken, skin side up, in shallow 13 x 9-inch baking dish. Sprinkle with salt and pepper. Brush with half of the glaze and bake 40 minutes.Meanwhile, combine hot water and 2 tablespoons margarine in bowl; stir until margarine is melted. Add stuffing mix and 1/4 cup orange juice. Stir to moisten crumbs. Move chicken to ends of dish. Spoon stuffing mix into center. Brush chicken with remaining glaze. Bake 20 minutes longer.
