Cranberry cake



  • sugar - 1 c
  • salt - 1/4 tsp
  • chopped nuts - 1 c
  • flour
  • soda - 1 tsp
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • baking powder - 1 tsp
  • salad oil - 3/4 c
  • orange juice - 1 c
  • whole cranberries - 1 c
  • grated rind of 2 oranges
  • diced dates - 1 c
  • Stir in nuts, dates, cranberries and orange rind

How to make cranberry cake:

Sift together dry ingredients. Stir in nuts, dates, cranberries and orange rind. Combine eggs, buttermilk and oil. Add to flour mixture. Stir until blended. Pour into well greased tube pan and bake 1 hour at 350°. Remove to plate; place on wide pan and spoon marinade over warm cake until it is absorbed into cake.Marinade:1 c. sugar1 c. orange juice Bring to a boil and pour over cake until warm. Cool cake; wrap in foil and refrigerate 24 hours before serving.
