  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • salt - 1 tsp
  • brown sugar - 1 c
  • butter - 1/2 c
  • nutmeg - 1/4 tsp
  • soda - 1 tsp
  • baking powder - 2 Tbsp
  • nuts - 1 c
  • white sugar - 1 c
  • orange juice
  • whole wheat flour - 2 c
  • grated orange rind - 2 Tbsp
  • white flour - 2 c
  • rum extract - 2 Tbsp
  • fresh cranberries - 2 c

How to make cranberry bread:

Sift dry ingredients together; cut in butter. Combine orange rind, orange juice and eggs. Add to dry ingredients, mixing just to moisten. Fold in coarsely chopped cranberries, nuts and vanilla. Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 55 to 60 minutes (or until done). Slices best the next day.

Note: Use frozen diluted orange juice and commercial orange rind. May use all white flour.
