Cranberry bread
Ingredients/Components
- cinnamon - 1/2 tsp
- eggs - 2 item
- salt - 1 tsp
- brown sugar - 1 c
- butter - 1/2 c
- nutmeg - 1/4 tsp
- soda - 1 tsp
- baking powder - 2 Tbsp
- nuts - 1 c
- white sugar - 1 c
- orange juice
- whole wheat flour - 2 c
- grated orange rind - 2 Tbsp
- white flour - 2 c
- rum extract - 2 Tbsp
- fresh cranberries - 2 c
How to make cranberry bread:
Sift dry ingredients together; cut in butter. Combine orange rind, orange juice and eggs. Add to dry ingredients, mixing just to moisten. Fold in coarsely chopped cranberries, nuts and vanilla. Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 55 to 60 minutes (or until done). Slices best the next day.Note: Use frozen diluted orange juice and commercial orange rind. May use all white flour.
