Ingredients/Components
- sugar - 1/4 c
- milk - 3/4 c
- salt - 1/2 tsp
- baking powder - 2 tsp
- egg - 1 item
- all-purpose flour - 1/2 c
- cornmeal - 1 c
- shortening, melted - 1/4 c
- cracklings - 1/2 c
How to make crackling cornbread:
Combine cornmeal, flour, sugar, baking powder and salt. Stir in milk and egg. Gradually stir in cracklings and shortening. Pour batter in a greased 8 x 8 x 2-inch square pan, muffin pan or corn stick pan. Bake in a 400° oven for 25 to 30 minutes.Note: Render salt pork to make cracklings, by putting salt pork in a frying pan and cook, stirring frequently, until crispy.
