Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- milk - 1 qt
- eggs, separated - 2 item
- coconut - 1/2 c
- crushed saltine crackers
How to make cracker pudding:
Beat egg yolks and add to the milk. Combine crackers with the egg and milk mixture. Add 1/2 cup sugar, vanilla and coconut in a saucepan. Cook until thickened. Allow egg whites to reach room temperature, then beat gradually, adding the remaining 1/4 cup sugar. Beat until stiff peaks form. Spread egg whites on top of cracker pudding and place in 350° oven until delicately brown.Recipe categories: Desserts, Puddings and mousses, < 30 mins.
