Cracked pepper steak
Ingredients/Components
- meat tenderizer - 1 item
- chuck steak 2 -1/2-3 inches thick - 4 lb
- cracked or coarse ground pepper - 3 Tbsp
How to make cracked pepper steak:
Slash fat edges of stake. Sprinkle all surfaces of steak with tenderizer, using about 1/2 tsp. per pound of meat. (DO NOT SALT.)To insure penetration, pierce all sides deeply every 1/2 inch with a long tined fork and work tenderizer into meat. Press pepper into both sides of steak.
Place steak on frill about 3 inches from coals and broil for about 35 to 50 minutes, turning frequently with tongs or turner.
To serve, slice thinly with sharp knife across grain of meat at about a 30 degree angle.
Serves 6-8.
