Ingredients/Components
- milk
- salt - 1 tsp
- butter - 4 Tbsp
- egg - 1 item
- dry mustard - 1 tsp
- Worcestershire sauce - 2 oz
- pepper to taste - 1 item
- medium onion, chopped - 1 item
- medium green pepper, chopped - 1 item
- fresh or canned crab meat - 1 lb
- cracker meal or fine bread crumbs - 1 item
How to make crab cakes:
Saute green pepper and onion in butter. Add mustard, Worcestershire sauce, salt and pepper. Blend in flour, using wooden spoon or wire whisk. Add crab meat. Chill thoroughly. Form into cakes, 1-inch thick. Dip cakes in cracker meal, then in beaten eggs, then in bread crumbs. Fry in deep fat until nicely browned.
