Crab au gratin
Ingredients/Components
- milk
- flour - 2 Tbsp
- butter - 3 Tbsp
- chopped onion - 2 Tbsp
- salt and pepper to taste - 1 item
- lump or backfin crabmeat - 1 lb
- shredded sharp cheese about 4 oz - 1 c
How to make crab au gratin:
Pick through crab to remove shell. Put it in a 2-quart casserole dish and set aside. Saute onion in butter. Remove from heat and add flour. Set back on heat and add milk immediately. Stir constantly until mixture thickens and comes to a boil. Add shredded cheese and stir quickly until it melts. Remove from heat. Salt and pepper to taste. Gently mix it with crabmeat in the casserole dish. (Top with buttered bread crumbs.) Bake at 325° for 30 to 45 minutes or until hot and bubbly. Can sprinkle with paprika before baking.If you would like it a little zestier, add a little Worcestershire sauce, lemon juice, Old Bay seasoning or Tabasco to the cheese sauce before mixing with the crabmeat. Any variation of the preceding ingredients can be added. Serves 4.
