Ingredients/Components
- lemon juice - 2 3
- Dijon mustard - 1/2 tsp
- parsley, chopped - 1 c
- green onions, chopped - 6 item
- ground coriander - 1/4 tsp
- to 2 cloves garlic, minced - 1 item
- cucumber, chopped - 1 c
- Dressing:1/3 c
- medium tomatoes, chopped - 2 item
- canned garbanzo beans - 2 c
- salt and pepper as needed - 1 item
- cooked couscous - 2 c
How to make couscous salad:
Mix all together and toss with the salad dressing.Dressing:1/3 c. olive oil2 to 3 Tbsp. lemon juice1 to 2 cloves garlic, minced1/2 tsp. Dijon mustard1/4 tsp. ground coriander salt and pepper as needed To prepare couscous, bring 1 1/4 cups water or broth to boil. Add dash of salt and 1 cup of couscous. Remove from heat.
