Country potato soup
Ingredients/Components
- diced and pared potatoes - 3 c
- diced celery - 1/2 c
- diced onion - 1/2 c
- water
- chicken bouillon cubes - 2 item
- salt - 1/2 tsp
- milk - 2 c
- sour cream - 1 c
- flour - 2 Tbsp
- chopped chives - 1 Tbsp
How to make country potato soup:
In large saucepan combine potatoes, celery, onions, water, bouillon and salt. Cover and cook until vegetables are tender (about 20 min.) Don't over cook potatoes; they should be just tender, not mushy. Add 1 cup milk and heat.In medium bowl mix sour cream, flour, chives, and other cup of milk and heat. Gradually stir sour cream mixture into soup base. Cook over low heat, stirring constantly until thickened. Makes 6 cups.
