Ingredients/Components

  • salt - 2 tsp
  • brown sugar - 2 Tbsp
  • water - 1/2 c
  • shortening - 1 Tbsp
  • cider vinegar - 2 Tbsp
  • can tomato sauce - 1 oz
  • tomato juice - 2 c
  • beef rump roast - 6 lb
  • dry pinto beans - 1 lb
  • sliced medium onions - 2 item
  • banana peppers or green pepper strips - 1 c
  • dry mustard or thyme - 1 tsp

How to make country pot roast:

Wash beans; cover with water and let soak overnight. Bring beans to a boil and cook for 1 hour. Drain and discard water. Brown roast in hot shortening in a large roaster pan. Add peppers, onions, beans and remaining ingredients. Cover and bake in 350° oven for 2 1/2 to 3 hours or until beans are tender and meat is done. Makes 8 to 10 servings.
