Country pot roast
Ingredients/Components
- salt - 2 tsp
- brown sugar - 2 Tbsp
- water - 1/2 c
- shortening - 1 Tbsp
- cider vinegar - 2 Tbsp
- can tomato sauce - 1 oz
- tomato juice - 2 c
- beef rump roast - 6 lb
- dry pinto beans - 1 lb
- sliced medium onions - 2 item
- banana peppers or green pepper strips - 1 c
- dry mustard or thyme - 1 tsp
How to make country pot roast:
Wash beans; cover with water and let soak overnight. Bring beans to a boil and cook for 1 hour. Drain and discard water. Brown roast in hot shortening in a large roaster pan. Add peppers, onions, beans and remaining ingredients. Cover and bake in 350° oven for 2 1/2 to 3 hours or until beans are tender and meat is done.
