Country mushroom soup
Ingredients/Components
- butter or margarine - 1/4 c
- salt - 1/2 tsp
- all-purpose flour - 1/4 c
- cooking oil - 3 Tbsp
- pepper - 1/4 tsp
- chicken broth - 2 c
- finely chopped onion - 1/4 c
- finely chopped celery - 2/3 c
- to 2 bay leaves - 1 item
- sliced, fresh mushrooms about 1 lb - 4 5
- half and half cream or milk - 2/3 c
How to make country mushroom soup:
In a 2-quart saucepan, melt butter; stir in flour until smooth. Gradually stir in broth until smooth. Add salt, pepper and bay leaves. Simmer uncovered for 15 minutes, stirring occasionally.Meanwhile, in another saucepan, saut?© the celery and onion in oil until tender. Add mushrooms; cook and stir until tender. Add to broth mixture; bring to a boil. Reduce heat; simmer uncovered for 15 minutes, stirring occasionally. Add cream; heat through. Discard bay leaves. Yield: 4 servings.
