Ingredients/Components

  • butter or margarine - 1/4 c
  • salt - 1/2 tsp
  • all-purpose flour - 1/4 c
  • cooking oil - 3 Tbsp
  • pepper - 1/4 tsp
  • chicken broth - 2 c
  • finely chopped onion - 1/4 c
  • finely chopped celery - 2/3 c
  • to 2 bay leaves - 1 item
  • sliced, fresh mushrooms about 1 lb - 4 5
  • half and half cream or milk - 2/3 c

How to make country mushroom soup:

In a 2-quart saucepan, melt butter; stir in flour until smooth. Gradually stir in broth until smooth. Add salt, pepper and bay leaves. Simmer uncovered for 15 minutes, stirring occasionally.

Meanwhile, in another saucepan, saut? the celery and onion in oil until tender. Add mushrooms; cook and stir until tender. Add to broth mixture; bring to a boil. Reduce heat; simmer uncovered for 15 minutes, stirring occasionally. Add cream; heat through. Discard bay leaves. Yield: 4 servings.
