Country ham with red-eye gravy
Ingredients/Components
- butter - 1/4 c
- strong brewed coffee - 1 c
- 1/4 to 1/2-inch thick country ham slices - 3 item
- light brown sugar, firmly packed optional - 1/4 c
How to make country ham with red-eye gravy:
Make cuts in fat to keep ham from curling. Melt butter over low heat in a heavy skillet; add ham and cook 5 minutes on each side or until browned. Remove ham from skillet and keep warm. Stir brown sugar into hot drippings until dissolved, if desired. Add coffee and bring to a boil; reduce heat and simmer 5 minutes. Serve with ham or with ham and biscuits. Yields 1 cup gravy.Prep: 5 minutes. Cook: 15 minutes.
A strong dose of black coffee, this recipe's key ingredient, will keep many people awake, hence the name red-eye gravy.
