Country captain chicken
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 2 tsp
- water - 2 c
- raisins - 1/3 c
- Worcestershire sauce - 1 tsp
- curry powder - 2 tsp
- can tomato sauce - 1 oz
- medium onion, chopped - 1 item
- chicken, cut up - 2 to
- rice - 1 c
- chopped peanuts optional - 1 item
- chopped parsley optional - 1 item
How to make country captain chicken:
Heat oven to 350°. Combine rice and raisins in shallow, 2-quart (12 x 8 x 2-inch) baking dish. Melt butter or margarine in large skillet. Stir in curry powder. Add chicken; brown well on all sides. Arrange on rice mixture.Add onion to drippings in skillet and cook until tender. Stir in water, tomato sauce, salt and Worcestershire sauce. Bring to boil. Pour over chicken; stir. Cover and bake in 350° oven for 40 to 45 minutes or until chicken is tender and rice mixture desired consistency. Garnish with chopped peanuts and parsley, if desired. Serves 4 to 6.
