Ingredients/Components
- sugar - 1 tsp
- salt - 1 tsp
- curry powder - 2 tsp
- clove garlic - 1 item
- olive oil - 3 Tbsp
- red pepper - 1/8 tsp
- medium onions, chopped - 2 item
- bell pepper, chopped - 1 item
- blanched almonds
- powdered thyme - 1 tsp
- stock*, cooled, boned and cut in bite-sized pieces - 1 chicken,
- cans tomatoes, cut up and drain partially save remainder of juice, may need it if too dry - 2 lb
- currants or raisins, soaked in chicken stock * - 1/2 c
How to make country captain:
Saute onions, garlic and bell pepper in olive oil. Add tomatoes, cook 5 minutes. Add rest of ingredients (spices and seasonings). Cook 10 minutes. Add chicken. Transfer to a casserole and bake, uncovered, in 350° oven for 45 minutes. Add soaked currants and almonds. Serve with or over rice. Can freeze.Recipe categories: Chicken, Main dish, Poultry.
