Corned beef salad
Ingredients/Components
- pkg - 1 oz
- cold water - 3/4 c
- boiling water - 1 c
- hard-boiled eggs, chopped - 3 item
- mayonnaise or salad dressing - 1 c
- small onion, finely chopped - 1 item
- jar chopped pimentos, drained - 1 oz
- diced celery fine - 1 c
- can corned beef shredded with a fork - 1 oz
- frozen peas, scalded and drained
How to make corned beef salad:
Add boiling water to Jell-O, then add the 3/4 cup cold water. Chill until slightly thickened. Add all other ingredients to Jell-O mixture and pour into slightly oiled 13 x 9-inch pan. Chill overnight. Cut into squares and serve on lettuce leaf. A dash of horseradish added to mixture gives a little more zest. Serves 12.Recipe categories: Main dish, North american.
