Corned beef potato salad
Ingredients/Components
- sour cream - 2/3 c
- salt - 1/2 tsp
- salad oil - 1/4 c
- garlic powder - 1/4 tsp
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- wine vinegar - 2 Tbsp
- black pepper - 1/4 tsp
- horseradish - 2 Tbsp
- dash of red pepper - 1 item
- cubed, cooked potatoes - 4 c
- diced dill pickle - 1/2 c
- can cubed, corned beef - 1 oz
How to make corned beef potato salad:
In large bowl, toss potatoes, meat, pickle, celery and onion. In covered jar, shake oil, vinegar, salt, pepper and garlic powder. Pour over meat and potato mixture; toss. Cover and refrigerate for 2 hours.Before serving, mix sugar, cream, horseradish and a little red pepper. Pour over meat and potato mixture; toss. Season to taste.
