Ingredients/Components

  • sour cream - 2/3 c
  • salt - 1/2 tsp
  • salad oil - 1/4 c
  • garlic powder - 1/4 tsp
  • chopped onion - 1/2 c
  • chopped celery - 1/2 c
  • wine vinegar - 2 Tbsp
  • black pepper - 1/4 tsp
  • horseradish - 2 Tbsp
  • dash of red pepper - 1 item
  • cubed, cooked potatoes - 4 c
  • diced dill pickle - 1/2 c
  • can cubed, corned beef - 1 oz

How to make corned beef potato salad:

In large bowl, toss potatoes, meat, pickle, celery and onion. In covered jar, shake oil, vinegar, salt, pepper and garlic powder. Pour over meat and potato mixture; toss. Cover and refrigerate for 2 hours.

Before serving, mix sugar, cream, horseradish and a little red pepper. Pour over meat and potato mixture; toss. Season to taste.
