Cornbread salad
Ingredients/Components
- medium tomatoes - 3 item
- mayonnaise - 1/2 c
- medium onion, chopped - 1 item
- bell pepper, chopped - 1 c
- sweet pickles, chopped - 1/2 c
- sweet pickle juice - 1/2 c
- box Jiffy cornbread mix - 1 item
- green onion, chopped - 1/2 c
- green onion tops, chopped fine - 1 item
- pieces crisp, crumbles - 6 item
- additional bacon, fried crisp and crumbled - 1 item
How to make cornbread salad:
Bake cornbread according to pkg. directions and let cool. Mix tomatoes, bell pepper, green onion, onion, pickles and bacon. In a separate bowl, mix mayonnaise and pickle juice together. Crumble corn bread into a shallow dish; add a layer of tomato mixture; nest, spread a layer of mayonnaise mixture; repeat layers until complete.
