Cornbread salad
Ingredients/Components
- pickle juice - 2 Tbsp
- large green pepper - 1/2 item
- mild sausage - 1 lb
- corn muffin mix - 1- 1/2
- approximately bread and butter pickles - 1/3 c
- medium or large tomatoes - 2 item
- medium or large onions - 2 item
- cup heaping mayonnaise - 1/2 item
How to make cornbread salad:
Mix and bake cornbread according to directions. Remove from oven, cool and crumble. Meanwhile cook sausage, crumbling as it cooks. Drain off grease, wash with warm water and finish draining on paper towel. Chop pickles, tomatoes, onions and pepper. Add mayonnaise and pickle juice. Stir in sausage and cornmeal.NOTE: Bacon, bacon bits polish sausage or Italian sausage may be used instead of sausage. Light mayonnaise may also be substituted.
