Cornbread dressing

- fryer or hen - 1 item
- boxes Jiffy cornbread mix - 2 item
- oil - 1/4 c
- large onions, diced - 2 item
- celery stalks, diced - 2 item
- medium bell pepper, diced - 1 item
- poultry seasoning - 2 tsp
- garlic, chopped, to taste - 1 item
- slices bread - 3 item
How to make cornbread dressing:
Boil a fryer or a hen with seasoning of your choice. When cooked, deboned the chicken or hen and keep the broth. Cut chicken into small, diced, pieces. Cook two boxes of Jiffy cornbread mix and cool.In about 1/4 cup oil, cook down onions, celery, bell pepper, and garlic with 2 teaspoons of poultry seasoning. In a large mixing bowl, finely crumble 1/2 of the cornbread. Add 3 slices of bread soaked in water (squeeze water out of bread). Add cooked vegetables and start adding broth until the mixture is very wet. Add chicken. You can continue adding more cornbread or broth to reach right consistency, but remember that mixture should be very moist. If you need more liquid, chicken broth may be used. Add salt, pepper, or Tony's to taste. Press into baking dish and brown in 350° oven.
