Corn relish
Ingredients/Components
- sugar - 1 2
- salt - 1 Tbsp
- water - 1 c
- vinegar - 1 qt
- dry mustard - 2 Tbsp
- chopped onion - 1 c
- celery seed - 1 Tbsp
- mustard seed - 1 Tbsp
- turmeric - 1 Tbsp
- chopped sweet red peppers - 1 c
- chopped cabbage about 1 small head - 1 qt
- chopped sweet green peppers - 1 c
- cut corn about 18 ears - 2 qt
How to make corn relish:
Boil corn for 5 minutes. Cut from cob. Combine with remaining ingredients in a large saucepot. Bring to a boil. Reduce heat and simmer 20 minutes. Pack hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process for 15 minutes in boiling water bath. Yields about 6 pints.Recipe categories: < 60 mins, Vegetables, Corn.
