Ingredients/Components

  • sugar - 1 2
  • salt - 1 Tbsp
  • water - 1 c
  • vinegar - 1 qt
  • dry mustard - 2 Tbsp
  • chopped onion - 1 c
  • celery seed - 1 Tbsp
  • mustard seed - 1 Tbsp
  • turmeric - 1 Tbsp
  • chopped sweet red peppers - 1 c
  • chopped cabbage about 1 small head - 1 qt
  • chopped sweet green peppers - 1 c
  • cut corn about 18 ears - 2 qt

How to make corn relish:

Boil corn for 5 minutes. Cut from cob. Combine with remaining ingredients in a large saucepot. Bring to a boil. Reduce heat and simmer 20 minutes. Pack hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process for 15 minutes in boiling water bath. Yields about 6 pints.
