Corn relish
Ingredients/Components
- sugar - 2 c
- salt - 1/4 c
- vinegar - 1 qt
- dry mustard - 1 Tbsp
- stalks celery - 3 item
- small head cabbage - 1 item
- turmeric - 1 tsp
- large green peppers - 3 item
- large onions - 2 item
- hot peppers - 3 item
- ears corn - 1 doz
How to make corn relish:
Chop celery, onions, cabbage and peppers. Cut corn from cob and scrape cob. Combine all ingredients, except turmeric. Bring to boil. Reduce heat and cook 30 minutes. Stir often. Add turmeric. Fill hot sterile jars and seal. Makes 8 pints.Recipe categories: < 60 mins, Vegetables, Corn.
