Corn relish
Ingredients/Components
- sugar
- salt - 1 Tbsp
- water - 2 c
- chopped onion - 1 c
- chopped celery - 1 c
- chopped green pepper - 1 c
- celery seed - 1 tsp
- white vinegar
- corn - 10 c
- mustard seed
- turmeric - 1/2 tsp
- chopped sweet red pepper - 1 c
How to make corn relish:
Drop ears of corn in boiling water. Boil 5 minutes. Dip in cold water. Cut from cob; measure. Combine corn with remaining ingredients and boil 15 minutes. Pack into sterilized jars to within 1/2-inch of top. Put on cap; screw band firmly tight. Process in boiling water bath 15 minutes. Makes 5 to 6 pints.Recipe categories: < 60 mins, Vegetables, Corn.
