Ingredients/Components

  • sugar - 1 c
  • salt - 1 Tbsp
  • water - 2 c
  • vinegar - 2 c
  • onion, chopped - 1 c
  • celery seed - 1 tsp
  • green pepper, chopped - 1 c
  • celery, chopped - 1 c
  • corn - 8 c
  • mustard seed - 2 Tbsp
  • turmeric - 1 tsp
  • sweet red pepper, chopped - 1 c

How to make corn relish:

Place ears of corn in boiling water. Boil 5 minutes; drop in cold water. Cut from cob and measure. Add remaining ingredients and boil 15 minutes. Pack into sterilized jars to within 1/2-inch of top. Seal and process in boiling water bath for 15 minutes. Makes 4 to 5 pints.
