Corn pancakes



  • cut corn - 6 ears
  • unsifted all-purpose flour - 2 c
  • sugar - 2 Tbsp
  • salt
  • baking powder - 2 tsp
  • dash of pepper - 1 item
  • large eggs - 3 item
  • milk - 3/4 c
  • melted butter - 2 Tbsp

How to make corn pancakes:

Cut corn from cob and scrape cob for additional corn milk. Sift dry ingredients together.

Combine eggs, milk and butter. Stir into dry ingredients, blending only until moistened. Add corn and corn milk. Cook on a hot griddle or in an oiled frying pan. Serves 10 to 12.
