Ingredients/Components

  • salt - 1/2 tsp
  • eggs, separated - 3 item
  • sifted flour - 1/4 c
  • dash of pepper - 1 item
  • bacon or sausage - 1 item
  • kernel corn fresh or canned

How to make corn pancakes:

Beat egg yolks until light. Mix in corn, salt, pepper and flour. Beat egg whites until stiff and fold into corn mixture. Fry in bacon fat (or butter/oil) until golden. Turn and do other side. Serves 4 to 5 people. They puff up nicely.
