Ingredients/Components

  • can whole kernel corn, drained - 1 item
  • flour - 1 c
  • low-fat sour cream - 1 c
  • eggs - 2 item
  • applesauce - 2 Tbsp
  • finely chopped onion - 2 Tbsp
  • baking powder - 1 tsp
  • sugar - 1 tsp
  • salt - 1/2 tsp
  • ground nutmeg - 1/4 tsp
  • pepper - 1/8 tsp
  • oil for frying - 1 item

How to make corn fritters:

Combine all ingredients, except oil for frying, in medium bowl. Mix well. Let stand 1 hour. Heat 2 to 3 inches of oil in deep fryer. Drop batter by heaping tablespoonfuls into hot oil. Fry a few at a time for 5 to 6 minutes or until golden brown. Drain on paper towels. Repeat with remaining batter. Serve immediately or keep warm in 175° oven.
