Corn chowder
Ingredients/Components
- salt
- butter - 3 Tbsp
- hot water - 3 c
- dash of pepper - 1 item
- sprinkle of paprika - 1 item
- finely chopped parsley - 2 tsp
- diced raw potatoes
- slices onion - 2 item
- bacon or salt pork - 2 oz
- evaporated milk or coffee cream - 1 c
- fresh corn, cut from cob, or 1 No - 2 c
How to make corn chowder:
Chop bacon and onion coarsely; put into soup kettle. Saute until onion is soft and bacon is done. Add potatoes, corn and water. Cover and simmer until potatoes are tender. Add butter, milk and seasonings. Reheat to boiling. Serve piping hot with a little parsley sprinkled over the top, or a few dashes of paprika.
