Ingredients/Components
- eggs - 3 item
- sour cream - 1 c
- salt and pepper - 1 item
- grated Cheddar cheese - 1/2 c
- can creamed corn - 1 oz
- large onions, chopped fine - 2 item
- can whole corn, drained - 1 oz
- box Jiffy corn muffin mix - 1 item
How to make corn casserole:
Beat eggs with fork in a large bowl until frothy. Add muffin mix, corn, salt and pepper to taste. Pour into 13 x 8-inch baking dish. Saute onions until clear and spread over corn mixture. Spread sour cream over all. Top with grated cheese. Bake 30 minutes at 325°. Serves 8 to 10.Recipe categories: Side dish, Corn, Casseroles.
