Ingredients/Components
- sugar - 2 tsp
- milk
- salt - 1 tsp
- flour
- water - 2 c
- oil - 3 4
- baking powder - 4 tsp
- white cornmeal - 1 c
- well beaten eggs - 2 item
How to make corn cakes:
Add cornmeal to water in saucepan. Cook over medium heat until thick and bubbly. Sift together flour, sugar, salt and baking powder. Add to cornmeal mixture alternating sifted dry ingredients and milk; stir with large spoon. Stir in oil, then add eggs. Stir well and fry like you would pancakes. I use a ladle to dip batter out.
