Copper pennies
Ingredients/Components
- sugar - 1 c
- vegetable oil - 1/2 c
- vinegar - 3/4 c
- Worcestershire sauce - 1 tsp
- medium onion, thinly sliced - 1 item
- prepared mustard - 1 tsp
- salt and pepper to taste - 1 item
- can condensed tomato soup - 1 3/4
- carrots, sliced in rounds - 2 pkg
- small green pepper in thin strips - 1 item
How to make copper pennies:
Cook carrots in salted water until medium done. Rinse in cold water. Arrange layers in bowl of carrots, green pepper and onion. Combine all remaining ingredients in saucepan and bring to boil. Stir thoroughly until blended. Pour marinade over carrot mixture. Refrigerate until flavor is absorbed. Drain to serve.Will keep for weeks in refrigerator and marinade liquid may be used again.
