Confetti rice
Ingredients/Components
- diced celery - 1 c
- diced carrots - 1 c
- fresh or frozen peas - 1/2 c
- long grain rice, cooked - 1 c
- sliced bacon, diced - 1/2 lb
- soy sauce optional - 1 item
How to make confetti rice:
Slightly cook carrots and celery; drain and set aside. In a large skillet, cook bacon until crisp. Remove to paper towels. Drain all but 3 tablespoons of drippings. Add rice, carrots, celery and peas. Cook until heated through, about 5 to 7 minutes. Stir in bacon. Serve with soy sauce, if desired. Makes 6 to 8 servings.Recipe categories: Side dish, Pork, Bacon.
