Ingredients/Components
- water - 1 qt
- salt and pepper to taste - 1 item
- small onion, chopped - 1 item
- small green pepper, chopped - 1 item
- can Great Northern beans, drained - 1 to
- medium potato, chopped - 1 item
- smoked sausage, cut into pieces - 1 lb
- collards, cleaned and shredded - 2 lb
How to make collard green soup:
Simmer sausage in water for 45 minutes. Add shredded collards and drained beans to meat and cook 30 minutes. Add onion, green pepper and potatoes. Season and cook until potatoes are tender.
