Collard green soup
Ingredients/Components
- small onion, chopped - 1 item
- salt to taste - 1 item
- small green pepper - 1 item
- ham bone - 1/2 lb
- bacon fat - 1 Tbsp
- white bacon - 1/4 lb
- potatoes, pared - 4 item
- Spanish sausages - 2 item
- 2 can collards
- 2 can great Northern beans
How to make collard green soup:
In 1 quart of water, place the ham bone, Spanish sausages and white bacon. Let cook for about 1/2 hour. Add the collard greens and great Northern beans. Allow to cook over slow heat for 1/2 hour. Saute the onions and green pepper in bacon fat until onion is transparent. Add to the greens. Cut the potatoes in medium size pieces add to the greens. Season with salt and pepper.
