Ingredients/Components

  • sugar - 3 Tbsp
  • cinnamon - 1/4 tsp
  • water - 1 c
  • curry powder - 1/4 tsp
  • dry white wine - 2 tsp
  • ripe peaches - 4 item

How to make cold peach soup:

Plunge peaches in boiling water for 1 minute. Drain, peel, halve and stone. Puree peaches in blender. Transfer to saucepan and add wine, water, sugar, cinnamon and curry powder. Bring to a boil and simmer 10 minutes.

Chill soup at least 4 hours. Serve in chilled bowls and garnish with a thin slice of peach.
