  • sour cream - 1 c
  • heavy cream - 1 c
  • apricot nectar - 1 qt
  • fresh orange juice
  • strawberries - 1 item
  • pinches cinnamon - 2 item
  • pitted, peeled peaches - 12 item

How to make cold peach soup:

Combine nectar, juice and cinnamon in a saucepan and bring to a simmer. Cook peaches in mixture until soft. Puree in blender. Pour mixture into bowl. Add cream and sour cream. Refrigerate. Garnish with strawberries. Serve with gingersnaps.
