Ingredients/Components
- sour cream - 1 c
- chicken stock - 1 c
- scallions - 3 item
- small or 2 large cucumbers, peeled and cut in half use spoon to scoop out seeds and soft part - 3 item
- fresh mint or fresh dill - 1 item
How to make cold cucumber soup:
Puree cucumbers, scallions and fresh mint or dill with chicken stock. Add sour cream and chill. Note: The European cucumbers are great when not too high-priced as they are nearly seedless.Recipe categories: Low protein, Appetizers, Soups & stews.
