  • yeast - 1 pkg
  • warm water - 1/2 c
  • ginger - 1/8 tsp
  • sugar - 1 Tbsp
  • large can evaporated milk - 1 item
  • salt - 1 tsp
  • salad oil - 2 Tbsp
  • flour
  • raisins - 1/2 c

How to make coffee can bread:

Grease 2 (1 pound) coffee cans with lids, too. Dissolve yeast in 1/2 cup warm water in a large bowl. Blend in ginger and 1 tablespoon sugar. Let stand 15 minutes. Stir in 2 tablespoons sugar, evaporated milk, salt and salad oil. With mixer on low, beat in 3 1/2 cups flour, 1 cup at a time, mixing well. Beat in 1 more cup flour with heavy spoon (4 1/2 cups in all). Add raisins, if desired.

Place dough in well-greased cans. Put on plastic lids. Let rise until lids pop off, 45 to 60 minutes. Bake at 350° for 45 minutes. Let stand in can 10 minutes. Turn out; cool and slice.
