Coffee cake muffins
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- flour
- brown sugar - 1/2 c
- baking powder - 2 tsp
- melted butter - 2 Tbsp
- shortening - 1/4 c
- sifted flour
- beaten egg - 1 item
- chopped walnuts or pecans - 1/2 c
How to make coffee cake muffins:
Spicy Nuts:2 Tbsp. flour1/2 c. brown sugar1/2 c. chopped walnuts or pecans2 tsp. cinnamon2 Tbsp. melted butter Sift together dry ingredients; cut in shortening until mixture resembles coarse crumbs. Blend egg and milk; add all at once to flour mixture. Stir just until dry ingredients are moistened. Alternate layers of batter and Spicy Nuts in greased muffin pan, ending with a layer of batter, filling 2/3 full.For Spicy Nuts: Combine ingredients and mix well.
Bake in moderate oven (375°) for 20 minutes. Makes 12 muffins.
