Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- baking soda - 1 tsp
- shortening - 1/2 c
- blueberries
- sour cream or buttermilk - 1 c
How to make coffee cake:
Fruit Filling: fresh fruit or canned pie filling (I use 2 c. blueberries) Topping:1/2 c. sugar1/2 c. chopped nuts1 tsp. cinnamon Mix the first 5 ingredients. Add the flour, sour cream or buttermilk and baking soda. Take 2/3 of the batter; spread on bottom of greased 9 x 13-inch pan. Spread fruit filling over batter. Spread rest of batter on top of fruit.Topping: Top with mixture. Bake at 350° for 35 minutes.
