Ingredients/Components
- sugar - 3 Tbsp
- salt - 1/8 tsp
- cornstarch - 3 Tbsp
- coconut milk, divided - 2 c
How to make coconut pudding:
Combine sugar and cornstarch in small bowl. Blend in 1/2 cup coconut milk and salt. Heat remaining 1/2 cup coconut milk in medium saucepan. Do not let it boil. Add cornstarch mixture. Cook and stir until thickened. Pour into 8-inch square dish. Refrigerate until firm. Makes 4 servings.Recipe categories: Desserts, Puddings and mousses, Coconut.
