Ingredients/Components
- sugar
- eggs - 3 item
- salt - 1/2 tsp
- coconut - 1 c
- oil - 1 c
- buttermilk - 1 c
- baking powder - 3/4 tsp
- self-rising flour - 2 c
- coconut flavoring - 1 tsp
How to make coconut pound cake:
Mix oil, sugar, flour, eggs and baking powder. Mix together buttermilk and salt. Add buttermilk mixture to flavoring and coconut. Bake 40 minutes in a 350° cold oven. Use a Bundt pan or tube pan, greased and floured.When cake cools, top with icing of equal parts of powdered sugar, milk and coconut flavoring.
