Ingredients/Components

  • sugar
  • eggs - 5 item
  • milk - 1 c
  • coconut - 2 c
  • soda - 1/4 tsp
  • baking powder - 1 tsp
  • vegetable shortening
  • cake flour - 3 c
  • coconut flavoring

How to make coconut pound cake:

Cream the shortening and sugar. Add eggs, one at a time, blending after each. Add milk and coconut flavoring. Sift dry ingredients. Add to mixture. Fold in coconut. Bake in a tube pan in a cold oven at 325° for 1 1/2 to 2 hours.
