  • frozen coconut - 1 pkg
  • Pour into 9 x 13-inch prepared pan
  • frozen or fresh coconut 1/2 pkg - 1 pkg

How to make coconut pineapple cake:

Beat ingredients 2 minutes. Pour into 9 x 13-inch prepared pan. Bake 30 minutes at 350°.Topping:1 c. sugar1 c. milk1 pkg. frozen coconut2 Tbsp. lemon juice1 small can crushed pineapple, drained1 (8 or 10 oz.) whipped topping1 pkg. frozen or fresh coconut (1/2 pkg.) Spread over cooled cake and sprinkle remaining 1/2 package over top. Refrigerate a day or two.
