Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- flour - 2 Tbsp
- cornstarch - 1 Tbsp
- egg yolks - 3 item
- flaked coconut
- pinch of salt - 1 item
- oleo - 1 Tbsp
- sweet milk - 1 pt
How to make coconut pie:
Beat eggs with mixer until foamy. Add sugar, flour and cornstarch. Slowly add milk. Cook until thick. Remove from heat; add salt, vanilla, oleo and coconut. Return to heat; cook until coconut, salt and vanilla are hot and mixed well with pie filling. Pour in 9 or 9 5/8-inch baked pie crust. Top with meringue.
