  • sugar - 3 Tbsp
  • vanilla
  • milk - 2 c
  • salt - 1/4 tsp
  • flour - 6 Tbsp
  • butter - 1 Tbsp
  • coconut - 1 pkg
  • 9-inch baked pie shell
  • egg yolks, beaten - 2 item
  • Add milk and egg yolks

How to make coconut pie:

Combine sugar, flour and salt in a double boiler. Add milk and egg yolks. Stir until smooth. Add 1 cup coconut; cook until thick. Remove from heat and add vanilla and butter. Cover with meringue. Bake 15 minutes at 300°.Meringue:2 egg whites4 Tbsp. sugar Beat egg whites until foamy. Add sugar gradually and beat until stiff. Add to pie. Sprinkle coconut on top.
