  • Cool Whip - 1 (8
  • stick melted margarine - 1 item
  • vanilla ice cream, softened - 1/2 gal
  • instant coconut pudding
  • sleeves Ritz crackers - 2 item

How to make coconut delight:

Crumble crackers and reserve 1 cup for topping. Mix remaining crackers with melted margarine. Press into a 9 x 13-inch pan.

Mix pudding and milk. Add softened ice cream. Spread over cracker layer. Top with Cool Whip and sprinkle with reserved crackers.
