Ingredients/Components

  • eggs - 3 item
  • milk - 1 c
  • heavy cream - 1/2 c
  • unsalted butter, softened - 1 Tbsp
  • grated orange rind - 1/2 tsp
  • sugar - 1/2 c
  • plus 3 Tbsp - 3/4 c
  • unbaked pastry for a single crust 9-inch pie

How to make coconut custard pie:

Preheat oven to 400°. On medium speed of electric mixer, beat the eggs. Add milk and heavy cream; beat to blend. Add butter, orange rind, sugar and 3/4 cup coconut, mixing until blended. Pour into pie shell; sprinkle with remaining coconut. Bake for 30 to 35 minutes, or until custard is well set. Cool before serving.
