  • butter, softened - 2 Tbsp
  • sugar - 2/3 c
  • milk - 3 c
  • salt - 1/2 tsp
  • cornstarch - 1/4 c
  • flaked coconut - 1 c
  • egg yolks, slightly beaten - 4 item
  • vanilla or almond extract - 2 Tbsp

How to make coconut cream pie:

Stir together sugar, cornstarch and salt in a saucepan. Blend milk and egg yolks together. Gradually stir into sugar mixture. Cook over medium heat. Blend in butter and extract. Stir in 3/4 cup flaked coconut. Sprinkle remainder of flaked coconut over whipped cream on pie. Chill pie for 2 hours prior to serving.
