Ingredients/Components

  • sugar - 2/3 c
  • vanilla
  • milk - 3 c
  • salt - 1/2 tsp
  • flour - 1 Tbsp
  • butter - 1 Tbsp
  • cornstarch - 3 Tbsp
  • coconut - 3/4 c
  • egg yolks, slightly beaten - 3 item
  • Gradually stir in milk
  • tartar - 1/4 tsp

How to make coconut cream pie:

In saucepan, mix sugar, salt, cornstarch and flour. Gradually stir in milk. Cook until thickens; boil 1 minute. Remove, carefully stir in egg. Blend in butter, vanilla and coconut. Cool; stir constantly. Pour into pie shell. Chill. Top with meringue with toasted coconut.Meringue:3 egg whites1/4 tsp. tartar2 Tbsp. sugar Beat to peak. Add tartar and sugar. Top pie. Add coconut on top. Brown lightly in 325° to 350° oven.
